Organic Shiitake Mushroom Kit
The Shiitake (Lentinula edodes) is a native of East Asia, where its Japanese name translates to "tree mushroom." For centuries it has been a valued source of food and medicine across China, Japan, Korea and Russia. As a saprophytic fungus it thrives on dead wood, which is why this kit is grown on organic grain-supplemented sawdust.
Shiitake earns its reputation on flavor — deep, savory and unmistakably meaty, with a fragrance that fills a kitchen. Sautéed, stuffed, roasted, grilled or pickled, it brings depth to soups, sauces, stir-fries, pasta and omelets, and pairs as easily with poultry and seafood as with vegetables.
How it grows
Shiitake is the slowest and most deliberate kit on this shelf, and it rewards the patience. Your block arrives fully colonized. Cut the bag, mist twice daily, and keep it out of direct sun — the first pins take a little longer than oysters, usually one to two weeks.
Harvest when the caps have opened but the edges are still curled under. Between flushes, let the block rest and dry slightly, then soak it in cold water overnight to trigger the next round. Most blocks give two or three flushes.
Worth knowing
Shiitake dries better than any other mushroom here — arguably it improves, concentrating into something deeper than the fresh version. If you run a dehydrator, this is the kit to grow for the pantry rather than the pan.
Organic, grown on supplemented sawdust. Indoors, year-round, no garden required.
